Since launching the farm nearly four years ago, we’ve experienced growth and adventures beyond our wildest dreams. It all started with a Texas Longhorn bull named Ferdinand. Thanks to the mentoring of our cattleman and dairyman friends from Texas to New England, we found our passion and have never looked back. 

We remain dedicated to our commitment to humanely-raised, forage-fed and heart-healthy meats. Our love for Texas Longhorns only grows stronger as we appreciate their stunning beauty, ease of raising, and their beef's flavorful, heart-healthy qualities. We’re also thrilled to share that we were recently awarded a Climate Smart Restoration Grant through the Connecticut Department of Agriculture, allowing us to expand our farmland and implement more sustainable practices as we build toward a fully regenerative farm.

Our aim is to become great stewards of this iconic American original and see if we can breed something extraordinary, make our mark, and, along the way, dine on the Best Beef America Can Put on a Plate.

Grijalva Cattle Co. (Gree-hal-va) is a family-owned and run operation founded in 2021 and located in North Stonington, CT. We manage all of the farm's day-to-day operations, breeding program, and beef program.
